If you can forgo the microwave (at least in the room) I would suggest either Disney’s Wilderness Lodge or Disney’s Animal Kingdom. They are the least expensive of the Disney full service hotels.
Both resorts are in Disney’s Deluxe category so they will have full service restaurants. You should have access to a microwave in the hotel food courts.
If your disability requires any special accomodations be sure to note them when making your reservation. (i.e. ground floor, non smoking required)
